Head Pastry Chef

About this role

I am Looking for a Head Pastry Chef for a modern urban 5* hotel located in the heart of the city.
The hotel is home to 237 bedrooms, 42 of which are suites. Featuring an array of dining destinations including a signature restaurant showcasing Singaporean-style dining, and a timeless elegant living room serving afternoon tea.

Head Pastry Chef Responsibilities:

• Prepares and present baked pastries including the preparation of Baked pastries, Chou pastry dishes, Croissants, Brioche, Kuchen, Danish pastries, Savarins and babas, Gateau pithiviers and savoury product from chou short and puff
• Prepare and present afternoon tea items including flans and pies
• Prepare and present desserts including frozen desserts, cold desserts, hot desserts, speciality desserts
• Prepare and present gateaux, torten and cakes (preparing, finishing and decorating them)
• Prepare modelling marzipan (for creating flowers, figures or covering cakes)
• Prepare range of cheesecakes, range of petit fours secs
• Handling and storage of commodities
• Bake and fill a variety of sweet pate dishes
• Maintaining hygienic standards and practices
• Leading the team to ensure the overall desired productivity
• Developing the team
• Assisting with the recruitment of new team members
• Scheduling the team
• Controls and monitors departmental costs on an ongoing basis to ensure performance against the budget
