October Newsletter

October is an exciting time for the London restaurant industry. The restaurant show at Kensington Olympia has just finished which included; The National Chef of The Year and Young Chef of The Year competitions. Congratulations to Luke Selby, former head chef at Dabbous restaurant, for the National Chef crown and to Danny Young, Sous chef at Nortcote, who won Young National chef of the Year. Collins King & Associates will also be attending Food service Catey’s which is on Friday 13th of October.

We have also seen the Michelin guide launch this month with Alain Ducasse and Gordon Ramsay both retaining their 3 stars and The Araki winning 3 stars for the 1st time. A big congratulations to all our clients, candidates and everyone who has worked so hard to win their stars.

Collins King & Associates were proudly the headline sponsor at the ACE Ready Steady Cook event on Thursday 28th September at East Winter Garden. The competition had 14 teams competing from the food service sector and we witnessed a fantastic effort from everyone involved. They all  produced high standard dishes in just 30 minutes from a mystery box but the big  congratulations went to the team from Restaurant Associates who collected the winner’s prize!

Pumpkins hog the limelight in October, though game season is in full flow. Don’t forget less showy seasonal fare such as wild mushrooms, hearty root vegetables and a great mix of late summer berry’s.

This month the best seasonal ingredient’s are Aubergines, Beetroots, Butternut squash, Apples, Pears and Plums

Our favorite October dishes are:

Pumpkin and mascapone ravioli with sage butter
~
Harty pheasant stew with chestnut dumplings

~
Pressed Apple terrine with calvados ice cream

HR in Hospitality Awards 2017
On Friday 29th September we attended the awards at the beautiful Rosewood Hotel in Holborn. It’s fair to say it was a (very) lively crowd, but the events team was amazing and the food was equally great. A special congratulations to the HR and Recruitment team at The Belfry Hotel & Resort (Sutton Coldfield) who scooped the prize for Talent Attraction, presented by our very own Gary King.
