Head Chef – Modern European Seasonal Menu – Opening Team – Ireland
Head Chef required to develop and lead a brigade of 10 Chefs on the opening of a boutique hotel with a 50 cover fine dining restaurant. Our client is passionate about a restaurant that works closely with the seasons and the best local produce. Ambitions to achieve One Star Michelin within 24 months by serious commitment to funding and mentoring to the business.
The site is based on an the estate of a large mansion house, the Head Chef will provide advice on the design and implementation of the kitchen design and equipment required to ensure this kitchen can produce amazing cuisine. It has space for an incredible kitchen garden and plans for this are already well under way to grow fruit, vegetables and herbs. A world class gardener has already been retained and will work closely with the Head Chef.
The Head Chef will lead, train and develop a brigade of 10 Chefs, we expect the Head Chef to run the kitchen in a way to encourage positivity and as a destination kitchen for other Chefs The successful candidate will be given plenty of freedom and input on kitchen design, suppliers, management style and menu development to make this a reality. The menu will change with the seasons as the home grown produce is ready. Basic knowledge of horticulture is encouraged, but can be given if an interest is already there.
The role would suit a passionate Head Chef or a Sous Chef in a One Star Michelin kitchen, or 3 AA+ Rosette venue. However a commitment and passion for local and seasonal food is the main requirement.

Basic salary of £60,000 + Bonus (exceptional candidates welcome to submit details if higher)
